LITTLE TANZANIAN SWEET: VITUMBUAS

Here you’ll find one of our favorite vegan and healthy sweet we discovered in Tanzania. It’s made of rice and coconut. It’s a delicious combination which is crusty outside and melty Inside. We used to eat it mainly for the breakfast.


Preparation time : 1h 
Cooking time : 15 min 

| INGREDIENTS :

For a dozen of cakes 

2 cups of rice
1 tea spoon of yeast
1 cup of preheat coconut milk
2-3 table spoon of scrapped coconut (optional)
1½ tea spoon of salt
1 cup of sugar
1 tea spoon of cardamon poudre (optional)
½ tea spoon of almond or vanilla extract (optional)

| PREPARATION :

In order to soften the rice, leave it in a big bowl field with water for at least 4 hours. If you can leave it all night long it’s even better.

Remove the water and add coconut milk, scrapped coconut, spices, sugar, salt and the yeast. Mix it all in a blender until it get’s nicely fluid.

Poor the mixture in a bowl, cover it and leave it in a warm place until the volume becomes double from the initial size.

Heat the pan and put a bit of oïl in each hole.

Make sure the oïl is hot enought before your poor the dought into the holes. Fill the holes to 3/4 of their capacity.

Cook for 2-3 min on each side and flip the cake with a stick or a spoon.

Let it cool down a bit before tasting it. It’s best to eat with a chaï or a coffee.
